BayStone oysters are grown outside Bay Center in Willapa Bay, Washington, on the Tribes' largest and deepest tidelands. Using a static raised longline off-bottom culture system, these oysters are tumbled back and forth in their cages as the tide comes in and goes out, producing a deep cup filled with plump oyster meat. In this location, the BayStones are inundated with fresh ocean water from the Pacific mixing with estuarine nutrients due to the massive current rushing through our farm, which gives them a fresh brine with an added mineral flavor and, lastly, a hint of fresh rain in their smell and taste. Not only do oysters love this area, but so do the barnacles; these BayStone oysters will have light touches of barnacles on their shell.
